Issue 002: From My Heart to Yours

Hey Q-Crew!

I want to take a moment and say a heartfelt thank you for believing in me enough to be here! And speaking of hearts, Valentine’s Day is TOMORROW. If you’ve already got dinner plans, you might need some for breakfast too 😉 This week’s recipes are sweet & savory heart-shaped noms: Guava Pancake & Veggie Mini Frittatas!

This month’s theme is For The (Food) Lovers. Whether you’re making it for yourself, family, bae, gal or palentine’s, these recipes are an easy way to show someone (or a few people, I don’t judge) that y’all go together REAL BAD.

Heart-Shaped Guava Pancake Bites

Prep time: 15 minutes

Cook time: 20 minutes

Servings: 3

Ingredients:

  • 2 cups pancake mix
  • 1 1/2 cups water
  • 5 oz guava paste
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • 2 tbsp butter
  • 1-2 tbsp water

Step 1: Heat the oven to 420° and cut the guava paste into small cubes.

Step 2: Add the guava to a microwave safe bowl with the butter and water.

Step 3: Microwave for 30-45 seconds at a time, stirring in between, until the mixture takes on a jam-like consistency. Add more water as necessary if the mixture is too thick.

Step 4: While the guava is still warm, stir in the cinnamon, cardamom, and nutmeg.

Step 5: Stir the pancake mix with water until the large lumps are gone. Don’t beat or over mix, there should still be lumps. Then let it stand to thicken.

Step 6: Wait until the guava mixture is cooled enough to put into a Ziploc bag with the corner cut off to create a small opening or a piping bag if you’re feeling fancy.

Step 7: In a nonstick muffin pan, spoon just enough pancake mix to cover the bottom of the well.

Step 8: Add small dots or swirls of guava, then add another layer of pancake mix. Repeat until the wells are 3/4 full. Do not overfill.

Step 9: Over the top layer of the pancake mix, create a swirl of guava, or any shape or design you wish. These were created with a toothpick.

Step 10: Bake for 15-20 minutes or until the tops are golden brown. Remove from the oven and serve warm with syrup.

Heart-Shaped Veggie Mini Frittatas

Prep time: 20 minutes

Cook time: 15 minutes

Servings: 3

Ingredients:

  • 6 eggs
  • 1 cup shredded cheese
  • 1/4 cup half & half
  • 1/3 cup onion
  • 1/3 cup diced tomato
  • 1/2 cup chopped spinach
  • 1/2 cup diced mushrooms
  • 1/3 cup diced bell pepper
  • 1/3 cup sliced scallions
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder

Step 1: Heat your oven to 350° and shred your cheese. I went with cheddar jack, but you can also do feta, gruyere, gouda, or any you love.

Step 2: Mix the eggs, half and half, seasonings, and shredded cheese together until well combined.

Step 3: I like to sauté my onions and mushrooms to soften them a bit so they’re not so crunchy, but that’s up to you.

Step 4: Mix the sauteed vegetables with the other vegetables.

Step 5: Put two spoonfuls of the vegetable mixture into the wells of your muffin tin.

Step 6: Pour the egg mixture into the wells until it has filled up roughly 3/4. Try not to overfill as it will expand while baking.

Step 7: Sprinkle your desired amount of cheese on top of the egg mixture.

Step 8: Bake at 350° for 15-20 mins until the cheese is melted and the edges are just slightly browned.

Step 9: Let stand 2 minutes before removing from the muffin tin. Note: the eggs will shrink and flatten a bit.

Step 10: Serve while hot! This makes a great breakfast side or can be used in an egg sandwich.
