
Issue 024: Who Needs A Grill?

Hey Q-Crew!
It’s no secret that my favorite style of cooking is over an open fire on the grill, but back when I lived in an apartment I found out that I could make fantastic barbecue right in my oven! And it takes even less effort than having to watch a grill. Big set it and forget it energy. This week’s recipes are Blueberry BBQ Poor Man’s Burnt Ends & Candied Jerk Pork Chops.
This month’s theme is Sweet & Sticky! Who doesn’t like to indulge their sweet tooth every once in a while? We deserve a little treat. But just because we want something sweet doesn’t mean we have to stick to just desserts. We’re exploring appetizers, mains, AND desserts this month to satisfy our craving!
Blueberry BBQ Poor Man’s Burnt Ends
Prep time: 10 minutes
Cook time: 3 hours 30 minutes
Servings: 6
Ingredients:
- 3lb chuck roast
- 1/2 cup yellow mustard
- 1/4 cup favorite BBQ rub
- 4 tbsp butter
- 1/4 cup honey
- 1 1/2 cup blueberry barbecue sauce:
- 1 cups ketchup
- 1/2 cup apple cider vinegar
- 1/2 cup honey
- 1/2 cup brown sugar
- 1 tbsp Burnt sugar or molasses
- 1 tbsp soy sauce
- 1/4 cup Yellow Mustard
- 2 cups fresh or frozen blueberries
- BBQ rub: 1 tsp each Salt, pepper, onion powder, garlic powder, paprika, 1/4 tsp cayenne pepper, chili powder
- 2 tbsp butter

Step 1: Use mustard as your binder and rub all over the roast.

Step 2: Season liberally with your favorite bbq rub.

Step 3: Bake uncovered at 250 for 2 hours flipping halfway through then let rest for 15 minutes.

Step 4: In a pot over medium heat melt the butter.

Step 5: Add the ketchup, apple cider vinegar, honey, brown sugar, burnt sugar or molasses, soy sauce, yellow mustard, blueberries, and BBQ rub.

Step 6: Stir until the sauce is combined.

Step 7: Bring the sauce up to a simmer then turn the heat to medium low.

Step 8: Let the sauce reduce and thicken for 15 minutes, stirring occasionally.

Step 9: Cool completely then put in a blender or food processor and blend until smooth.

Step 10: We’re going to use some of the sauce immediately, but the rest can be stored in the fridge in an airtight container for up to a month.

Step 11: Cut the roast into bite.

Step 12: Put into an aluminum pan with the bbq sauce, butter, and honey.

Step 13: Cover and bake for 1 hour at 350° stirring halfway through.

Step 14: Uncover and bake at 400 for 10 minutes to reduce the sauce and get it sticky.

Step 15: Serve hot!
Candied Jerk Pork Chops
Prep time: 15 minutes
Cook time: 3 hours
Servings: 6
Ingredients:
- 3 double cut pork chops
- 2 tbsp jerk seasoning
- 1/2 cup yellow mustard
- 1/4 cup favorite BBQ rub
- 1/4 cup Brown sugar
- 4 tbsp butter
- 1/4 cup honey
- 6 oz Red stripe (or unsweetened apple juice)

Step 1: Use jerk mustard (or any other preferred liquid) as your binder and rub all over the pork chops.

Step 2: Season liberally with your favorite bbq rub.

Step 3: Bake uncovered at 250° for 2 hours flipping halfway through.

Step 4: Spritz every half hour with red stripe beer (or apple juice for a non-alcoholic alternative).

Step 5: Add brown sugar, honey, butter, and the remaining spritz liquid.

Step 6: Cover and bake at 350° til tender.

Step 7: Uncover, brush with a little barbecue sauce, and bake at 400° for 10 minutes to set the glaze.

Step 8: Serve!

Bonus Recipe: Leftover Burnt Ends Pizza
If you’ve ever wondered what to do with some great leftovers, make a pizza! This was my first attempt at making pizza from home and there’s deff some room to improve, but my whole family loved it. Ranch sauce, cheddar cheese, topped with burnt ends, green peppers, and red onions. SO GOOD!
